Our restaurant is part of a charming rural structure, the typical Salento farmhouse, recovered with commitment and passion keeping the authenticity of the place unchanged.
The dining area is where once was the shelter for animals and household goods; the original stone of the floor, the ancient masonry, the wooden beams on the ceiling and the beautiful wooden and wrought iron door restore the warm atmosphere of the past.
The furniture, the attention to detail and the view of the garden and the sea make the environment intimate and welcoming. The dining area extends towards the garden with a covered terrace where you can enjoy the magnificent panorama, without filters, in the beautiful Salento summer evenings.
I like playing with raw materials, giving them a new look to disclose a course “in disguise”. I define such dishes as “It’s not what it seems”, and therefore an octopus may become a dessert, or maybe the dessert represents an octopus… spaghetti with tomato sauce could reveal a surprise at the first taste…
Whenever I’m in the kitchen, time stops. There’s only me and the dish I have in mind. I start from an emotion or a memory to create it with the products of my organic garden that are ripe at the right point. Sometimes the dishes take shape just at the sight of the small vegetables making their way through the leaves, enlightened by the gentle rays of dawn.
I fix the colours in my mind and suddenly understand which nuances the menu will have. The main feature of my cuisine is nature and all its colours and scents because a dish is not just food but also nourishment for our spirit.
I pursue the perfect balance between the past and local traditions and the present and international influences, always seeking the best and respecting raw materials. Creativity is the common thread that links the past with the present, traditions with contaminations.
That’s how our kitchen becomes the workshop of a close-knit and passionate brigade, who spend time in the “home” organic garden for raw materials and build up their know-how over years of work experience in the main European cities. As the menu changes with the seasons, the wine selection also varies to preserve the relationship between wine and food.
The restaurant of Masseria Samenti is open every day and welcomes guests in the evening from 7.45 pm.
